How to Make Homemade Butter?

Step 1: Pour the cold cream into your food processor, blender, an electric hand mixer or stand mixer.

Step 2: Lash the cream until it separates. After around 2-3 minutes you will see it start to over whip and really thicken. After around 4 minutes you will see it will fully separated. You can see yellow buttery solids and a cloudy liquid.

Step 3: Once it is done pour in the ice cold water. This helps separate the butter fully and it separates liquid (buttermilk) and you will see even more buttermilk appear.

Step 4: Place a sieve over a bowl and pour the contents.  The liquid that remains is buttermilk.  Save the buttermilk in the fridge.

Step 5: Squeeze the butter balls in your hands to make sure there is no buttermilk is there. You have to remove all buttermilk from the balls otherwise it will be wet.

Step 6: Mix some salt or flavors you want to soft butter. Now, Your itis ready you can then wrap the butter to keep in the fridge and eat.

Step 1: Add all the ingredients together in a Bowl or in a large pot.

Step 2: Blend the mixture well with the help of hand Blender or Hand Churner .

Step 3: Put in a large pot, add the mixture and pour in 2 cups of chilled water. Mix it well so there are no lumps.

Step 4: Refrigerate till it’s ready to be served. However, give the chaas (Buttermilk) at least 20 minutes to set.

Step 5: You can sprinkle some chaat masala and roasted cumin seeds on top before serving, and garnish with a sprig of coriander leaves as well.

  • Two bunches of Mint Leaves coarsely chopped
  • 1 bunch of coriander leaves
  • 1/2 inch Ginger, crushed
  • Pinch of Black Pepper

  • Salt to taste

How to make Pudina Buttermilk (Chaas)?

Step 1: Take the mint and coriander leaves and hand crush it in a big jar. Add the buttermilk and blend the mix gently.

Step 2: Add the remaining ingredients and mix it well with one of those old-school butter churners.

Step 3: Keep it in the refrigerator for about 20 minutes or so, and serve.

Step 4: You can put some Pudina leave on top before serving.

Spiced Majjige

  • 5-6 cups chilled water
  • A big pinch of asafetida (Hing)
  • 2 inch ginger, crushed
  • Pinch of Black Pepper
  • 4 sprigs of curry leaves
  • 2-3 small green chillies, chopped
  • Salt to taste

How to make Spiced Majjige?

Step 1: Taste a big jar add salt, black pepper and asafetida to the curd, and pour in the water. Blend the ingredients well.

Step 2: In a separate bowl, take the spoon to crush the green chillies and curry leaves.

Step 3: Pound the ginger in a mortar and pestle (crusher). You can use the mortar and pestle to pound all the ingredients together as well.

Step 4: Add the spices to the buttermilk, mix it well with a hand blender and refrigerate it for about 15-20 minutes. This not only chills the drink, but also enables the majjige to absorb the flavours of the spices.

Step 5: Serve it with a sprinkling of chaat masala on top, or a couple of curry leaves.
